The Bolognese sauce (in dialect Rago, while sufrétt, pesto sauce will mean the start of onion, carrot and celery) is a traditional meat sauce Bolognese cuisine. The sauce is traditionally served with egg noodles (tagliatelle alla bolognese), but is also used to flavor other types of pasta such as lasagna (enriched with white sauce) and the typical poor man's dish of the past: the polenta.

This is very popular abroad is sauce for spaghetti (erroneously called spaghetti bolognese, which are common in northern Europe and even sold in cans): this dish, now popular in Italy, is certainly not attributable to the Bolognese cuisine as spaghetti are not part of the Emilian tradition that has always preferred the pasta than the more southern dry pasta.
