Cassoeula (from old shit), in Milan, sometimes Italianized trowel or Cazzola, or bottaggio (probably derived from the French word potage) is a popular winter dish typical of the Milanese and Lombard.

The name probably derives from the spoon with which it mixes (casseou)

There are many local variations:

* Como no tradition in the legs and the chopped vegetables, but the white wine is added and the head.
* In the west, towards Novara, one of the ingredients you can find the goose meat.
* Are used only in Pavia pins.
* Milan is also used in the ears and the nose of the pig.
* Always in Milan is prepared Bottaggio differing use of chicken instead of pork.
